A Cuisine
At L’ALCÔVE inspiration surrounds us, brought by nature - an inexhaustible source. It starts with the visual, natural and bright colors; the patterns; textures; light, which together create a symphony for the eyes, as well as for the palet.
Inspiration is also found in the seasons. This cyclical, natural rhythm offers us wonderful things each day. Chef Cabasson is passionate about working in harmony and honouring the different seasons and moments in nature.
His travels have offered him the opportunity to learn about different cultures, to open up to new scents, flavors, and culinary techniques and to apply them in his own creations.
At every opportunity Chef Cabasson continues to travel to discover new sources of inspiration that contribute to his intriguing cuisine.

The farm-to-table approach allows one to preserve taste and flavors as much as possible, while retaining all the nutrients, all the while reducing one’s impact on nature.
