The Portrait of
Chef Bastien
Cabasson

Starting
Out...
Born in Provence, Bastien discovered cuisine thanks to his grandmother. He was always by her side creating memories, with flavors and aromas full of love and generosity.
It was a simple, Provençal cuisine but it was rich in sharing and emotions.
His grandmother saw in Bastien a great sensitivity for cuisine and she supported him in the idea of continuing this culinary adventure.
If today Bastien aspires to share his passion and take people on a journey through their memories through his cooking, it is thanks to her.
During several years forging his first experiences in cuisine in Marseille and Switzerland, Bastien relentlessly sought to advance in his mastery of culinary techniques. He decided to travel to London where he spent a year at the gastronomic restaurant Le Morgan M.
This very fulfilling experience then directed him towards Paris to aim for the world of the stars.

"My passion is to contribute to a refined, inspired, and elegant cuisine that is both authentic and modern, that speaks of memories and at the same time creates new ones..."
- Chef Bastien Cabasson
A Starry
Journey...
It is alongside Chef Hélène DARROZE * in the 6th arrondissement in Paris that Bastien discovered this world of excellence where passion, creativity, rigor, and authenticity are the requirements.
Right from the start of this experience, that of a cuisine that honors the south-west of France, Bastien understood that his future career would revolve around haute cuisine.
With this intention Bastien crossed the Seine River to reach the 8th arrondissement to work alongside Chef Jérôme BANCTEL at the Restaurant SENDERENS **.
There, at the Place de la Madeleine, Bastien opens up to a mastered, technical cuisine, with touches and culinary methods from Japan and a great deal of modernity.
Then, Bastien seized the opportunity to join the team of Chef Laurent DELARBRE, Meilleur Ouvrier de France, in the prestigious gastronomic institution LA TOUR D'ARGENT *, and to work alongside his Sous Chef Yohan LASTRE, World Champion in Pâté-Croûte.
With the view of Notre Dame de Paris from the kitchen and being full of enthusiasm and determination, Bastien acquired a real knowledge of the quintessence of French gastronomy. He worked on reinterpretations of the culinary heritage of La Tour through the emblematic recipes that have made it famous.
Bastien then continued to evolve in his career at the double-starred restaurant MICHEL ROSTANG ** alongside Chef Nicolas BEAUMANN, disciple of the great Chef Yannick ALLÉNO.
It is here, in the 17th arrondissement of Paris, that Bastien contributed for two years to a cuisine of excellence which combined classicism and modernity and worked with the most refined products with precision.

Returning to
in Bandol...
After five years spent with these major Michelin-starred chefs of Paris, Bastien decided to return to his roots in Provence and in 2016 he accepted the position of Sous-Chef alongside Chef Jérémy CZAPLICKI at L'HÔTEL ÎLE ROUSSE ★★★★★ in Bandol to support him in the challenge of obtaining a Michelin star for the gastronomic restaurant LES OLIVIERS.
After only two and a half years of commitment, enthusiasm, passion, and enormous rigor, the team was awarded a Michelin star.
For the next four years, Bastien ensured the continuity and amelioration of culinary services in order to maintain this award which is awarded for the quality of the products, the harmony of flavors, the mastery of techniques, creativity, and overall consistency.
“It is the richness of this region that nourishes all our senses with its views, its scents, its flavors, its textures, and its songs of nature...”

At Le Lido
de Toulon...
